Long Time, No Blog

Well not that long really. Anyways. I've been a little off my veg track, but I'm getting back on so I can feel better again and not feel permanently full/bloated. (Brian dragged me to Chili's yesterday and we split the crispy honey chipotle chicken crispers...i ate 1/2 the corn, 1/2 the mashed potatoes (bacon moved to his side) and less than 1/2 the chicken and I still felt full for most of the day after that...then I had black bean nachos, which were yummy but not exactly the most healthy lol.)

Sooo today the boyfriend and I tried out a new dining hall on campus- it's open to everyone for lunch, but breakfast/dinner is for athletes only. It's been there for forever, we've just never tried it before. Anyways, so I got a steamed veggie medley, corn, pasta salad and a PB&J sandwich (it was an all you can eat type place). Then for dinner tonight, I was going to do stir-fry but I ended up having a terrible, stressfull day so I made a vegan pumpkin bread from scratch (it is DELICIOUS!- I didn't add the dried coconut though because I didn't have any) and then baked a frozen cheese pizza. Yay for the convenience of frozen food for a college student. ^^

Any advice for ways to get back on track when you've been pigging out/off of your dietary goals? I need help! =)

  1. i totally tried the pumpkin bread....it was a HIT! i added sweetended coconute shreds, and i sprinkled tons of coconut shreds, brown sugar, and powdered sugar on top to form a sort of crust. dont look at me like that! i kno its alot of sweetness

    do not lick the coconut milk. delicious in food, completly and uttery disgusting by itself

  2. lol I tried doing a coconut milk chai tea latte....baaaaaddddd idea. DON'T do it. Stick to the soy milk...or the normal milk.
