Alright I made the best refried beans ever tonight and I will give you the recipe:
1 can Old El Paso Vegetarian Refried Beans
2 tbs canola oil
1 large clove garlic, sliced (or minced I guess, as long as it's fresh)
In a sauce pan, heat oil and garlic on medium heat until garlic becomes fragrant. Add can of beans. Use spatula to get as much out as possible, because believe me- you'll want to eat it. Mix oil into beans. Reduce heat to low. Heat all the way through, stirring occasionally. Serve hot. Garnish with cheese if desired (but you won't really need it).
Oh and guacamole:
1 avocado, sliced
juice of 1 lime
2 tbs salsa
After slicing avocado, use lime juice to prevent browning. Mash up mixture. Add salsa and mix thoroughly. Chill until ready to be served. Great as a dip with chips or on top of enchiladas or in a wrap. ^^
